Ingredients

The ingredients are:
  • 4 ounces soba noodles
  • 2 cups vegetables (stir fry vegetables, fresh can buy by the bag)
  • 1 teaspoon ginger (minced)
  • 2 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon peanut butter (natural)
  • 1 teaspoon fish sauce
  • 1 tablespoon rice vinegar
  • 1/4 cup cucumber, julienned
  • 2 spring onions (finely sliced)
  • 2 tablespoon chopped coriander

How to Make

  • Step 1: Bring 3 quarts of water to a boil in a large saucepan and add soba noodles and cook for 4 minutes, DO NOT DRAIN, remove soba noodles from the water and place in a colander and rinse with cold water.

  • Step 2: Bring the pot of water back to a boil and add the stir fry vegetables and par boil for 3 minutes then drain into the colander with the noodles.

  • Step 3: In a medium boil, whisk together ginger, garlic, soy, sesame oil, peanut butter, fish sauce, and rice vinegar.

  • Step 4: Add the noodles and vegetables to a bowl and then add the spring onion and cilantro and stir well to combine.

  • Step 5: Serve cold or at room temperature.
