"Princess Diana had something like this on her stuffed peppers. This recipe also used garlic but probably not her. You were supposed to use oil from the smoked vegetables but she watched her fat intake like a hawk so it probably wasn't included with her recipe."

Step by Step Method
Step 1
Preheat your grill, or preheat to 300 degrees F.

Prep your veggies.
Step 3
Cover two large baking sheets with tin foil.
Step 4
Place the carrots, onions, tomatoes and 2 cloves garlic if using.
Step 5
Drizzle with olive oil, sprinkle with salt and pepper, to taste, and stir gently to coat everything.
Step 6
Arrange the vegetables in a single layer on each of the baking sheets.
Step 7
Roast the veggies on your grill or oven for 2 hours until everything is tender and starting to turn brown and crisp on the edges
Step 8
Cool.
Step 9
Remove skin.
Step 10
Blend in food processor with stock.
Step 11
Add herbs.
