Step 1: Preheat your grill, or preheat to 300 degrees F.
Step 2: Prep your veggies.
Step 3: Cover two large baking sheets with tin foil.
Step 4: Place the carrots, onions, tomatoes and 2 cloves garlic if using.
Step 5: Drizzle with olive oil, sprinkle with salt and pepper, to taste, and stir gently to coat everything.
Step 6: Arrange the vegetables in a single layer on each of the baking sheets.
Step 7: Roast the veggies on your grill or oven for 2 hours until everything is tender and starting to turn brown and crisp on the edges
Step 8: Cool.
Step 9: Remove skin.
Step 10: Blend in food processor with stock.
Step 11: Add herbs.
