Ingredients

The ingredients are:
  • 4 pounds tomatoes quartered or halved, until roughly all the same size
  • 2 carrots peeled, cut into large chunks
  • 2 cups yellow onion, cut into wedges
  • 4 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cracked black pepper
  • 1/4-1/2 cup vegetable stock
  • 1/2 cup fresh basil
  • 1 tablespoon fresh oregano
  • 1 teaspoon rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper, to taste

How to Make

  • Step 1: Preheat your grill, or preheat to 300 degrees F.

  • Step 2: Prep your veggies.

  • Step 3: Cover two large baking sheets with tin foil.

  • Step 4: Place the carrots, onions, tomatoes and 2 cloves garlic if using.

  • Step 5: Drizzle with olive oil, sprinkle with salt and pepper, to taste, and stir gently to coat everything.

  • Step 6: Arrange the vegetables in a single layer on each of the baking sheets.

  • Step 7: Roast the veggies on your grill or oven for 2 hours until everything is tender and starting to turn brown and crisp on the edges

  • Step 8: Cool.

  • Step 9: Remove skin.

  • Step 10: Blend in food processor with stock.

  • Step 11: Add herbs.
