"I'm always embarrassed to add this. However, a recipe doesn't always have to be made from scratch - sometimes we all need short cuts. And being able to take store bought ingredients, and turning it into something delicious to me, can be considered a recipe. Now, we have all had that phone call where we find out you are having company - and have just enough time to run to the store - get ready - and some how still try to put something on the table. Well, this is one those salads that I absolutely love. A few store bought ingredients, and a fresh touch is all you need to make a great salad."

Step by Step Method

Note Regarding the Olive Mix ... All of my local grocery stores have either an olive bar or olive salad found in their Deli Section. Most I have found are usually a mix of olives, cherry peppers, and often Feta cheese. So that it what you are looking for. And when buying the mix, make sure to ask for a bit of the marinade or liquid. that is what will make your dressing.

Step 2

Salad ... Add your greens to the bowl you plan to serve your salad in. Note, if using a bag salad, I rarely rinse them, but feel free to if you like. Then, add the olive mix including some of the marinating liquid along with the juice of half a lemon. If your olive mix does not include feta, add about 3 oz, diced. And, to finish it off ... I love the thin toasted baguettes or pita chips you can buy (usually in the bakery section of the grocery store). You can crunch them up and add to the salad for a nice finish. You just want to add a little crunch to the salad. Season with salt and pepper and garnish with the small lemon wedges. ENJOY!
