"Sfougato Rhodes Quiche"

Step 1

Preheat oven to 350 degrees

Step 2

Add onions and garlic to an oiled skillet . Cook until onions are soft, about 5 minutes.

Step 3

Add ground beef and cook for another 10 minutes.

Zucchini, chicken broth, thyme, oregano, parsley, and some salt and pepper.

Step 6

Cover and simmer for 30 minutes or until zucchini is soft.(I'm doing for 10 minutes with less chicken broth)

Step 7

When done, using a slotted spoon, take meat mixture and spoon into a mixing bowl to cool.( I'm just letting cool in skillet)

Step 8

Beat eggs in separate bowl and pour into meat mixture, add feta, and mix well.

Step 9

Pour into an oven safe dish.(I'm just using skillet it's already dirty)

Step 10

Top with more feta ,(optional).

Step 11

Place in preheated oven at 350F for 25-30 minutes, or until eggs are cooked and dish is set.
