Step 1
Place all the dry ingredients in a large bowl.
Step 2
Pour the sweetened condensed milk into a large measuring cup. Add water to equal 2 1/2 cups when combined with the milk. (To clarify, you'll have 2 1/2 cups of liquid consisting of the full can of milk PLUS whatever amount of water it takes to make 2 1/2 cups total). Whisk until well mixed. Add lemon juice. Whisk again until combined. Set aside for 5 minutes.
Step 3
Pour milk mixture and the beaten eggs to the dry ingredients. Stir until just blended - the batter will be a bit lumpy. Don't overmix.
Step 4
Gently fold in the melted butter.
Step 5
Butter a griddle and heat like you would for any pancake. Add batter to make pancakes of the size you want. Flip the pancakes when bubbles form on top and the edges look dry.
Step 6
To serve, pass syrup or preserves.
