"The secret ingredient for this guacamole is...fresh squeezed orange juice!! The recipe is my adaptation of the guacamole they serve at Boudro's, a Texas Bistro on the Riverwalk in San Antonio, where they wheel out a cart and make it fresh at your table-side. I have changed some of the ingredients to suit my taste. Cook time is chill time (while your sipping on your margarita) :)"

Step 1

Squeeze juice of orange and lime into a bowl.

Step 2

Scoop avocado from skin and loosely chop.

Step 3

Add tomato, jalapeno, onion, garlic, cilantro, salt, and fold into avocado mixture.

Step 4

Result should be crudely chopped, not mashed. Allow to chill for 30 minutes to 1 hour before serving. Serve with your favorite tortilla chips.
