"The secret ingredient for this guacamole is...fresh squeezed orange juice!! The recipe is my adaptation of the guacamole they serve at Boudro's, a Texas Bistro on the Riverwalk in San Antonio, where they wheel out a cart and make it fresh at your table-side. I have changed some of the ingredients to suit my taste. Cook time is chill time (while your sipping on your margarita) :)"

  • Make sure to select ripe avocados that are still a bit firm, as they will be mashed in the recipe.
  • For a milder guacamole, remove the seeds from the jalapenos before adding to the mixture.

  • Substitute the limes for lemons: The benefit of this substitution is that lemons have a more tart flavor than limes, which may add an extra layer of flavor to the guacamole.
  • Substitute the jalapenos for bell peppers: The benefit of this substitution is that bell peppers have a milder flavor than jalapenos, so this will help to reduce the spiciness of the guacamole.

Mango Guacamole Replace the orange juice with mango juice, and add 1 diced mango to the mixture. Reduce the amount of jalapenos to 1, and add 1/4 teaspoon of chili powder to the mixture.

Pineapple Guacamole Replace the orange juice with pineapple juice, and add 1/2 cup of diced pineapple to the mixture. Reduce the amount of jalapenos to 1, and add 1/4 teaspoon of cumin to the mixture.

Grilled Lime-Marinated Shrimp Skewers: These flavorful shrimp skewers are the perfect accompaniment to the fresh guacamole. Marinated in lime juice and garlic, they have a zesty, citrusy flavor that will really bring out the flavor of the guacamole.

Grilled Corn Salsa: This delicious grilled corn salsa is the perfect accompaniment to the grilled shrimp skewers and guacamole. The sweetness of the corn pairs perfectly with the zesty, citrusy flavor of the marinade, and the smoky grilled flavor adds a delicious depth to the dish.
