Seafood Pasta Salad

"A lovely quick and easy salad to serve on a warm night. So easy to make, with wonderful flavours. If I am in a huge hurry, I sometimes use already prepared marinara mix from the supermarket and butter lettuce leaves instead of rocket. Another wonderful recipe from one of my Woman's Weekly cookbooks. NOTE: Here in Australia Marinara mix can be used in pasta sauces, in soups, on pizzas and in risottos. The mix usually contains mussels, fish pieces, prawns and squid rings. I make my own using different seafood's from the supermarket or fish store."

Step by Step Method
Step 1
Heat oil in large frying pan; cook onion and garlic, stirring, until onion softens. Add marinara mix; cook, stirring, about 5 minutes or until seafood is cooked through. Place marinara mixture in large bowl, cover; refrigerate until cold.
Step 2
Cook pasta in large saucepan of boiling water until tender; drain. Rinse under cold water; drain.
Step 3
Place pasta and combined wine, mayonnaise, juice, sauces and parsley in bowl with marinara mixture; toss gently to combine. Chill a little in the refrigerator.
Step 4
Serve seafood salad on rocket or butter lettuce leaves.
