"I believe this is the recipe that the Country Women's Association used at the Royal Melbourne Show. The Country Women's Association kiosk make 100 dozen of these scones each day at the Royal Melbourne Show. These are so light and fluffy. Served with cream and jam, these are delicious. The suggestion is to use an old-style bone-handled, flat-bladed knife – not a spoon or electric mixer – to blend flour, milk, cream and salt."

Step by Step Method

Step 1

Set oven to 220C.

Step 2

Sift flour and salt really well together.

Step 3

Add sufficient enough milk and cream gradually, to make a firm but not dry mixture (just enough milk to make a dough, which is easy to handle and not too sticky, without to much extra flour on the board).

Step 4

Note ~ The suggestion is to use an old-style bone-handled, flat-bladed knife – not a spoon or electric mixer – to blend flour, milk, cream and salt.

Step 5

Place dough on slightly floured board and roll the mixture one way lightly; pat dough to 2 cm thick (3/4”).

Step 6

Cut and place scone shapes on a cold tray and brush tops with a little milk or melted butter.

Step 7

Bake in a hot oven set at 220C for 8 to 10 minutes.

Step 8

Scones are best served warm, cut in half and served with jam & a lashing of fresh cream.

Very good scones. I was about to make about 1 1/2 dozen scones with this recipe. Instead of the cream I used half and half, but otherwise made as directed. Thanks for sharing!
