Sausage Tortellini Soup

Step by Step Method
Step 1
Remove the casings from the sausage if you purchased links.
Step 2
Cook and crumble the sausage and diced onions over medium-high heat until the onions are softened and the sausage is cooked through, 8-10 minutes.
Step 3
Drain grease.
Step 4
Add the garlic and cook for 1 minute.
Step 5
Add the flour and cook for 1-2 minutes to remove the raw flour taste.
Step 6
Add basil, oregano, cayenne, hot sauce, mustard powder, pepper, and red pepper flakes.
Step 7
Stir to combine.
Step 8
Add the chicken broth and scrape the bottom of the pot.
Step 9
Slowly stir in the cream or 1/2 and 1/2. Bring to a boil, and reduce to a simmer.
Step 10
Add the kale (or spinach) and tortellini and simmer for 3-5 minutes. (or longer depending on tortellini's package directions)
Step 11
Taste the soup and add salt if necessary.
