Step 1: Remove the casings from the sausage if you purchased links.
Step 2: Cook and crumble the sausage and diced onions over medium-high heat until the onions are softened and the sausage is cooked through, 8-10 minutes.
Step 3: Drain grease.
Step 4: Add the garlic and cook for 1 minute.
Step 5: Add the flour and cook for 1-2 minutes to remove the raw flour taste.
Step 6: Add basil, oregano, cayenne, hot sauce, mustard powder, pepper, and red pepper flakes.
Step 7: Stir to combine.
Step 8: Add the chicken broth and scrape the bottom of the pot.
Step 9: Slowly stir in the cream or 1/2 and 1/2. Bring to a boil, and reduce to a simmer.
Step 10: Add the kale (or spinach) and tortellini and simmer for 3-5 minutes. (or longer depending on tortellini's package directions)
Step 11: Taste the soup and add salt if necessary.
