"I suspect every family living on the prairies has their favourite recipe for Saskatoon Pie. This one is ours. Expect compliments whenever you serve this taste tempting dessert. I double the recipe and make 3 - 4 pies. It looks runny when put into the pie shells but when baked - just perfect!"

Step by Step Method

Step 1

In pot, add saskatoons and water, bring to boil. Turn off heat, add lid and steam 5 minutes

Step 2

Add lemon juice. Mix sugar, flour and salt, blend in with saskatoons

Step 3

Pour into prepared shell, cover with top crust, seal and flute edges. It looks runny at this point but when baked it jells up beautifully. (be sure you have slits in your top crust or prick with a fork for air vents)

Step 4

I like to lightly flick water over crust with fingertips, carefully tip to spread the water, sprinkle with a bit of sugar before baking.

Step 5

Bake in a 400 degree oven for 15 minutes, reduce heat to 350 and bake for another 30 to 40 minutes or until nicely browned.

I made your pie yesterday in honour of your Birthday my dear friend! It is absolutely wonderful! I did make one change, I omitted the top crust and put my crumble topping on with addition of a wee bit of cinnamon. Thank you so much for another keeper! :-)
