"This is a lighter version of the traditional shrimp scampi with less butter, but it gets a nice flavor from the white wine and red pepper flakes. I prefer to use a good fresh shrimp for this, large or extra large, and for the pasta - angel hair or thin spaghetti is my choice. Add a few fresh herbs and a squeeze of lemon and that is all you need. It is very basic but absolutely delicious. Serve with some crusty bread and a salad on the side."

Step by Step Method

Step 1

Pasta ... Because the shrimp takes literally 5 minutes, you want to start the pasta first. Cook according to package directions and don't forget to salt your water. Once the pasta is done, drain and return to the pot as you cook the shrimp.

Step 2

Shrimp ... As the pasta cooks, start your shrimp. You want to use a large saute pan for this because you will be adding the cooked pasta to this pan. Add the olive oil to the pan and bring to medium - medium high heat. Add in the onion, garlic, and red pepper flakes and cook 3-4 minutes until the onions become slightly tender. Then, add in the shrimp, white wine and cook another 3-5 minutes until the shrimp JUST begin to turn pink and start to curl. Then add in the butter, lemon juice and zest and mix well.

Step 3

Finish ... Add the drained pasta, scallions and parsley and mix well. Cook another 1-2 minutes to combine everything and it is done.

Step 4

Serve ... Some crusty bread and salad is all you need.

  • When selecting the shrimp, make sure they are fresh and not frozen.
  • For a more flavorful dish, use high-quality olive oil.

  • Substitute shrimp for chicken: Chicken is a great alternative for those who don't eat seafood. It is a leaner source of protein and can be cooked in the same way as the shrimp. The benefit of this substitution is that it provides a healthier option for those who are looking to reduce their intake of saturated fat.
  • Substitute white wine for vegetable broth: Vegetable broth is a great alternative to white wine for those who don't want to use alcohol in their cooking. It adds a subtle flavor to the dish, while still providing the same level of moisture and flavor. The benefit of this substitution is that it makes the dish more suitable for those who don't want to use alcohol in their cooking.

Vegan Shrimp Scampi Replace the shrimp with 1 pound of firm tofu, cut into cubes. Replace the butter with vegan butter and use vegetable broth instead of white wine. Use vegan parmesan cheese or nutritional yeast as a topping instead of lemon juice and zest.

Tomato, Mozzarella and Basil Salad: This light and refreshing salad is the perfect accompaniment to Sarasota's Pasta Shrimp Scampi. The combination of tomatoes, mozzarella, and fresh basil is a classic combination that brings out the flavor of the shrimp scampi. The acidity of the tomatoes and the creaminess of the mozzarella provide a great contrast to the robust flavor of the shrimp. Plus, it's a great way to add some extra vegetables to the meal!

Garlic Parmesan Roasted Asparagus: This simple yet flavorful side dish is the perfect accompaniment to Sarasota's Pasta Shrimp Scampi. The roasted asparagus is coated in a garlic and Parmesan cheese mixture, which adds a wonderful depth of flavor and texture to the dish. The asparagus is lightly roasted, giving it a slightly smoky flavor that pairs perfectly with the shrimp scampi. Plus, the asparagus is a great source of vitamins and minerals, making it a nutritious addition to the meal.
