"This burger was inspired from 2 or 3 different sites; but, the ketchup was the deal breaker. I not only use this in the burger - but, on the burger, and with my fries too. This recipe also make fantastic sliders as well! Great for a BBQ, potluck, game night, friends over, entertaining, etc. But, plan ahead. I really love to make the base ahead of time; and let it marinade overnight if possible. The burger mix only gets better with time. Step by Step Method

Burger


Step 1

Add the shallots, garlic, mustard, beer, 1/2 the salt, 1/2 the pepper, and ketchup to the bowl; and, mix until well combined. If you didn't make the Guinness Ketchup ... you can use 2 teaspoons of basic ketchup, and 1 teaspoon Worcestershire. Then, add the meat; and, gently mix until everything is combined. Cover with plastic wrap; and let the meat rest to develop more flavor - overnight is best if possible; or, at least 4 hours.

Step 2

Once the meat has rested; form into 4 burgers; and, press a little well in the center using your thumb. This will prevent the burgers from 'puffing' up as they cook. Season the burger on each side, with the remaining salt and pepper.

Onions


Step 3

Heat up your pan (I prefer a cast iron or a grill pan); and, add a little olive oil. Grill your onions on medium high heat, just until you get a light sear or char. You want them tender; but, NOT soft. They only take a minute or so per side. Then, set them off to the side, cover with foil to keep warm if you want.

Step 4

Add a bit more oil to your pan; then, cook the burgers on each side until crusty and golden brown. You want to get a a nice crust before you flip them (about 4-5 minutes) - I like my burgers medium, but cook them to your liking. The last minute; add the cheese, cover with a lid or foil; and, remove from the heat. The heat will melt the cheese in just a minute.

Rolls


Step 5

Spread the inside of the burger buns/rolls with the mayonnaise; and broil until golden brown. I broil them on the second shelf down. Keep an eye on them, they only take a minute.

Step 6

Burgers, Finish, and Serve ... Add 2 lettuce leaves to the bottom bun/roll; then, the cheesy burger, grilled onion slice, pickle slices; and the top bun, slathered with the Guinness ketchup.

Step 7

ENJOY! ... On the side; fries or potatoes wedges with malt vinegar.

Wonderful burgers. They were very flavorful. I made mine in the morning and let them set in the refrigerator all day. When I got home from work, all I had to do was prep the buns and toppings (I made the ketchup ahead of time) and grill the burgers. All of the components is really what made these burgers special.
