"Special Diets for Special Kids. This is the recipe to prepare your rice for making Riz Cous, the rice version of couscous. I had to put an amount in for the brown rice, but roast as much as you would like."

Step by Step Method
Step 1
Preheat oven to 350° F.
Step 2
Grind desired amount of rice in a blender or food processor. The resulting rice should look like tiny pebbles - do NOT reduce to a powder.
Step 3
Place ground rice on a flat baking sheet (preferably with a lip), and roast for about 30 minutes.
Step 4
You want it to brown but not burn. You will need to keep a close watch and stir it several times. This process releases the oils in the rice, and is absolutely necessary for making a product similar to couscous.
Step 5
Cool and store roasted rice in an airtight container. It does not need refrigeration.
