Step by Step Method

Step 1

Wash and peel potatoes. Slice potatoes lengthwise into ¼ inch thick rounds, then cut each slice lengthwise into match-sticks. Place them in a bowl with water and let them sit for 5 minutes. Drain and dry with paper towels.

Step 2

Heat the oil in a Dutch oven (or deep fryer) over medium to high heat (for about 5 minutes). Place potatoes and fry for 20 minutes, or until brown and crisp, stirring once or twice. Remove and drain on paper towels.

Step 3

In a large skillet heat 2 Tbsp olive oil. Add onion and garlic and sauté until translucent.

Step 4

Add ham and peas. Taste and add pepper and salt if needed, depending on saltiness of ham.

Step 5

Add the fried potatoes to the pan and add beaten eggs. Stir and cook for 1 minute.

Step 6

Remove the pan from the heat and keep mixing until everything is coated with egg. Add the green onions and mix to combine.

Step 7

Serve immediately.

Very nice scramble. As an Argentinean I have to add a note. Revuelto Gramajo is a "super classic " Argentinean dish. It is so classic that there are no variations. The original one is just papas paille (shoestring potatoes), ham and eggs. Nothing else. There is a well-known Argentinean chef, called Francis Mallmann, that once wrote a recipe of Revuelto Gramajo with prosciutto instead of ham, and the country raised on protest. This is serious matter. There are a couple of scrambles that have peas, called "Revuelto de Arbejas" and "Colchon de Arbejas". I believe the original author of this recipe (not you Makikey) might have fussed them. Never the less this scramble is very good. Just a little trivia.
