"This is really good to use up leftover corned beef, or you can use canned corned beef."
Preheat oven to 350° F.
Mix sauerkraut, onion, caraway seeds, 1000 island dressing and sour cream. Spray 8 x 8" baking dish with Pam. Place this mixture on bottom. Crumble corned beef over top and spread to edges. Top with swiss cheese. Drizzle melted butter over bread cubes and pour on top of corned beef, spreading to edges.
Place in center of oven and bake uncovered 35-45 minutes till golden and toasty.

This is delicious! If you love Rueben you will love this recipe. I love a casserole that I can get ready ahead of time and this one lends itself well to do just that. I cut back the cheese to 4 oz. and the bread to 3 slices just to save a few carbs etc. It was still wonderful. I used a very dark rye bread that toasted beautifully. I'll be making this recipe again.
