Step by Step Method

Step 1

In a skillet over medium-low heat melt the lard and then add the garlic and onion, sautéing until tender and cooked through (10 minutes). Drain beans and mash to a puree and then combine the beans with chipotle, salt and mint -- add to pan with the onions and garlic. Flip the pan constantly and make sure you scrape bottom of skillet or beans will stick and cook for another 10 minutes or until the beans are dark and crusty. Turn beans out of pan, like an omelet, in one piece.

Step 2

Combine the goat cheese and cream together and serve on top of the beans.

Well I'm quite sure that someone who actually knows how to make an omelet could have succeeded at this and made it look like it should of. I can't make a traditional omelet to save my life. Just those ones that look like a burrito. That being said, this tasted fine. I choose not to get the chili sauce. Instead, I added some of my husband's Cholula sauce. I liked the crema on top. I let the goat cheese set out for a bit before mixing it in with the cream, so that it would mix better. Yes, we ate two servings a piece as our supper. I dare you to come sit beside me tonite.
