Ingredients

The ingredients are:
  • 2 tablespoons lard
  • 1 1/2 teaspoons garlic, chopped
  • 4 teaspoons onion, chopped
  • 2 cups black beans (cooked or canned black beans, drained well)
  • 1/2 teaspoon chipotle chile (canned and pureed)
  • 1/2 teaspoon salt
  • 2 tablespoons peppermint, chopped
  • 4 ounces goat cheese
  • 1/3 cup heavy whipping cream

How to Make

  • Step 1: In a skillet over medium-low heat melt the lard and then add the garlic and onion, sautéing until tender and cooked through (10 minutes). Drain beans and mash to a puree and then combine the beans with chipotle, salt and mint -- add to pan with the onions and garlic. Flip the pan constantly and make sure you scrape bottom of skillet or beans will stick and cook for another 10 minutes or until the beans are dark and crusty. Turn beans out of pan, like an omelet, in one piece.

  • Step 2: Combine the goat cheese and cream together and serve on top of the beans.
