"Something I often make for lunch or supper when I'm on the fly and eating alone (though of course if someone else is around I'll make one for them, too--aren't I nice?). Sometimes in place of the cheddar or mixed Mexican cheeses, I use shredded pepper jack cheese (Monterey Jack with jalapeno peppers) and omit the chilies. Can be topped with a dollop of sour cream with a sprinkle of cilantro for an extra flourish."

I loved the recipe...it brought back memories from back in the day when Weight Watchers had a quick start 2 week menu...it was my favorite lunch...although it wasn't baked in the oven just heated in the microwave...I didn't have a 6-inch tortilla...only an 8-inch and really small street taco size...so I made 2 street taco's...one had Mexican blended cheese and the other had the pepper jack...I liked them both...thanks for sharing your recipe...made for "What's On The Menu" tag game...
