Quick and Easy Grilled Garlic Anchovy Bread

"Grilled Bread ... Nothing new right? But this is Grilled Anchovy Bread. NO cheese, just anchovies, garlic, seasoning and olive oil. Delicious! This can be done on the out door grill, or on an inside grill pan; even a saute pan if that is all you have. Spicy, savory and salty all in one. I used a good Italian bread, but French bread or baguette is another good option."

Step by Step Method
Step 1
Anchovies ... Add a drizzle of olive oil to a small saute pan (non-stick) if you have it, and bring to medium heat. Add the anchovies and red pepper flakes and saute breaking them up as they cook - about 2-3 minutes. They will get lightly brown, and almost fall apart as they cook.
Step 2
Seasoning ... Then add in the Italian seasoning, crushed up in your palm, along with the garlic and cook another minute. Then finish it with the olive oil, and butter just until the butter is melted. Remove from the heat.
Step 3
Grill ... Lightly brush each side of the bread slices with the anchovy butter and add to the grill or to a grill pan. I like to add a heavy pan, or if you are grilling more than a couple of slices, you can use a small cookie sheet on top. Just something to weigh down the bread a bit. Grill on each side 1-2 minutes until lightly golden brown. ENJOY!
