"These are really soft cookies almost like a cake but in a cookie forum, there not the most attractive to look at but they sure taste good"

Step 1

Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.

Step 2

Add vanilla, chocolate chips and nuts.

Step 3

Drop by spoonful on greased cookie sheet and bake at 350 degrees F (175 degrees C) for approximately 10 minutes or until lightly brown and firm.

Great soft cookie. Great flavor. I did cut the chocolate chips to 1 cup and upped the walnuts to 1 cup, and next time will try some dried cranberries in them. Great way to use leftover pumpkin.
