Step by Step Method

Step 1

Saute onions in 1 tablespoon corn oil until golden. Remove pan from heat and add thyme.

Step 2

Season to taste and sprinkle steaks on both sides with flour, then brown steaks in 1 tablespoon hot vegetable oil on both sides in an iron skillet. Transfer steaks to pan with onions.

Step 3

Pour vegetable juice and bouillon over steaks.

Step 4

Cover pan and simmer steaks very slowly for 1 hour in the oven (350 degrees F)or on top of the stove.

Step 5

Add water as needed.

Step 6

After 1 hour cooking time, turn steaks over, then cover the steaks with the julienned vegetables and continue the cooking covered for 30 minutes more.

Step 7

To serve, arrange steaks on serving platter.

Step 8

Spoon sauce and vegetables over steaks.

Step 9

Sprinkle with parsley.

Step 10

Serves six.
