Step 1: Saute onions in 1 tablespoon corn oil until golden. Remove pan from heat and add thyme.
Step 2: Season to taste and sprinkle steaks on both sides with flour, then brown steaks in 1 tablespoon hot vegetable oil on both sides in an iron skillet. Transfer steaks to pan with onions.
Step 3: Pour vegetable juice and bouillon over steaks.
Step 4: Cover pan and simmer steaks very slowly for 1 hour in the oven (350 degrees F)or on top of the stove.
Step 5: Add water as needed.
Step 6: After 1 hour cooking time, turn steaks over, then cover the steaks with the julienned vegetables and continue the cooking covered for 30 minutes more.
Step 7: To serve, arrange steaks on serving platter.
Step 8: Spoon sauce and vegetables over steaks.
Step 9: Sprinkle with parsley.
Step 10: Serves six.
