Ingredients

The ingredients are:
  • 2 tablespoons corn oil
  • 1 cup onion, sliced
  • 1/4 teaspoon thyme
  • 3 pounds beef round steak, cut from top round ( six - 8 ounce steaks)
  • 1/4 teaspoon salt, seasoned
  • 1/8 teaspoon pepper
  • 1/4 cup flour
  • 1 cup beef bouillon
  • 1 cup vegetable juice (V8)
  • 1 1/2 cups carrots, cut into julienne (thin strips)
  • 1 1/2 cups leeks, cut into julienne (thin strips)
  • 1 1/2 cups celery, cut into julienne (thin strips)
  • 1 teaspoon parsley, minced

How to Make

  • Step 1: Saute onions in 1 tablespoon corn oil until golden. Remove pan from heat and add thyme.

  • Step 2: Season to taste and sprinkle steaks on both sides with flour, then brown steaks in 1 tablespoon hot vegetable oil on both sides in an iron skillet. Transfer steaks to pan with onions.

  • Step 3: Pour vegetable juice and bouillon over steaks.

  • Step 4: Cover pan and simmer steaks very slowly for 1 hour in the oven (350 degrees F)or on top of the stove.

  • Step 5: Add water as needed.

  • Step 6: After 1 hour cooking time, turn steaks over, then cover the steaks with the julienned vegetables and continue the cooking covered for 30 minutes more.

  • Step 7: To serve, arrange steaks on serving platter.

  • Step 8: Spoon sauce and vegetables over steaks.

  • Step 9: Sprinkle with parsley.

  • Step 10: Serves six.
