Step by Step Method

Step 1

Preheat oven to 325F.

Step 2

Remove most of the fat from meat, wash and dry.

Step 3

Sprinkle with salt and pepper.

Step 4

Place the meat, fat side up, in a casserole and cover with the onions, celery, chili sauce, water and parsley.

Step 5

Bake uncovered for 1 hour.

Step 6

Pour the beer over the beef and bake covered for 3 more hours or until tender.

Step 7

Cool to room temperature.

Step 8

Refrigerate, skim off the fat, slice and reheat in the oven.
