Step by Step Method

Step 1

Fill a small saucepan or skillet with 2 inches water and stir in vinegar (to help whites coagulate faster). Bring water to a simmer.

Step 2

Break each egg in separate small bowls.

Step 3

Using a wooden spoon gently swirl the water in a circular motion and pour one egg in at a time. Poach eggs at a bare simmer 3 to 4 minutes for medium cooked eggs, or until whites are firm but yolks are still runny. Transfer eggs as cooked with a slotted spoon to kitchen towel or paper towel to drain and season with salt and pepper.

I poached mine for 2 minutes and one was just right but the second slipped when taking out of the pan and broke and became instant hard but still tasted good. Served on wholemeal English muffins with ham, spinach and hollandaise sauce for a very enjoyable breakfast, thank you MCPammy, made for Alphabet Soup tag game.
