Step by Step Method

Step 1

Preheat oven to 425 degrees F.

Step 2

Place parchment paper on a cookie sheet.

Step 3

In a mixing bowl whisk together the dry ingredients (flour -salt). Using your hands blend the butter into the dry ingredients until crumbly. Then add the chopped pistachios and lime zest; toss. Stir in buttermilk and the maple syrup. DO NOT OVERMIX.

Step 4

Divide dough into 2 balls and place them on a floured board. Pat dough down so you have flattened circular discs.

Step 5

For optional glaze: pour some buttermilk on top of each mounded disc, spreading evenly with a pastry brush. Sprinkle sugar over the discs (if desired). Cut each circular disc/mound into 8 wedges.

Step 6

Place scone on cookie sheet and bake for 15 minutes or until puffy and golden brown.
