Step by Step Method
Step 1
*Mashed potatoes must be prepared without butter and milk.
Step 2
In a large mixing bowl, beat the mashed potatoes, butter, and peppermint extract.
Step 3
Gradually beat in confectioners' sugar.
Step 4
Press into a foil lined 13X9X2 pan.
Step 5
Melt chocolate chips and shortening in microwave 30 seconds at a time.
Step 6
Spread over potato mixture.
Step 7
Cover and refrigerate until set. Using foil, lift candy out of pan.
Step 8
Discard foil, cut candy into 1-inch squares. Store in an airtight container.
