Step by Step Method

Step 1

Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.

Step 2

Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute.

Step 3

Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape.

Step 4

Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.

These are fantastic!! I did make one slight change by using a mixture of white wine and chicken broth for the liquid and the flavor was amazing. The beans only needed about 10 minutes in the liquid to be perfectly cooked, not too mushy and perfectly a la dente. This is a make again dish for sure.

These beans are so delicious! I did make one change, I use jarred roasted red peppers and added in toward the end of the simmering. This is a delightful change of pace for the beans! Will be keeping this recipe handy. Thank you for sharing! Made for Billboard Recipe Tag.

5 stars all day. Wow was this good. I scaled back because I was making it for one. It was quick and easy to make with excellent results. Made as written but left out the sweet pepper as I was out. Thanks for sharing a recipe that I will again. My hubby is going to love this. The french beans were the bomb, so tender and flavorful. Made FYC tag game.

These are really good green beans. The only thing that I did differently is to use multi-colored peppers since I always have some in the freezer. Thanks for sharing this nice side dish, Nat.
