Step by Step Method
Step 1
Preheat the oven to 375 degrees. Grease a 9x13 inch pan.
Step 2
In a food processor combine the flour with confectioners sugar and (if using 1/2 teaspoon salt). Add in cold butter. Process until crumbly. Gently press the mixture into the bottom of the baking pan. Bakes 15-20 minutes or until just light golden brown.
Step 3
Meanwhile in a small bowl combine remaining 2 tablespoons flour, 1 teaspoon salt, and baking powder. In another bowl Using an electric mixer beat eggs, brown sugar, and corn syrup until light. Fold flour mixture into egg mixture, then pecans and coconut.
Step 4
Pour over crust and bake 20 to 25 minutes until set. When cool slice into 24 bars.
