Step by Step Method
Step 1
Cut the top of each orange and scoop out the pulp using a sharp knife. Retain the shells and dice the oranges into a glass bowl. Add the sugar, raisins and the brandy and leave this to marinade for 6 hours.
Step 2
Make a stiff meringue mixture the usual way with the egg whites and remaining sugar.
Step 3
Fill the orange shells with the fruit mixture and pipe some of the meringue on top of each one.
Step 4
Bake the shells at 230C (475F) for a few minutes until the meringue has browned.
Step 5
Serve these immediately
