Step by Step Method

Step 1

Mix the flour, sugar, baking powder, salt and the grated orange zest in a bowl.

Step 2

In a separate bowl, mix the egg yolks, vanilla extract, orange juice, and melted butter. Add to the dry ingredients and stir until just combined, making sure not to overmix. Fold in the pecans.

Step 3

In a small bowl, beat the egg whites until stiff. Fold into batter until just combined; DO NOT overmix.

Step 4

Ladle enough of the batter onto a heated waffle iron, spreading with the back of the ladle almost to the edges. Close the waffle iron and cook until golden brown and crisp. Repeat with the remaining batter.

Step 5

Cut the waffles into sections, if preferred, and arrange on 4 serving plates. Dust with confectioners sugar, garnish with grated orange zest and serve with warm maple syrup.

These tasted great, but I found the batter to be too thick and by using 1/4 of it per waffle, I got very small waffles. The batter wouldn't spread to the edges of my waffle iron. Next time I will double recipe and use more batter per waffle. I loved the crunch of the pecans.

5 stars all day every day. I have a new favourite waffle. Wow, are these crisp, yet tender waffles ever wonderful; we loved them. The flavor is simply outstanding, I really enjoyed the combination of orange, pecan, maple syrup and vanilla together, so very good. They were made exactly as written and I wouldn't change a thing. Quick and easy to make, I am in flavour heaven. Thanks FEM for sharing this treasure that has made it into my Best of 2019 cookbook. Made FYC tag game.
