Step 1

Mix the flour, sugar, baking powder, salt and the 1 teaspoon grated orange zest in a bowl. In a separate bowl, mix the egg yolk, vanilla extract, orange juice, and melted butter. Add to the dry ingredients and stir until just combined. Fold in the pecans.

Step 2

In a small bowl, beat the egg whites until stiff. Fold into batter until just combined; DO NOT overmix.

Step 3

Ladle 1/4 of the batter onto a heated waffle iron, spreading with the back of the ladle almost to the edges. Close the waffle iron and cook until golden brown and crisp. Repeat with the remaining batter.

Step 4

Cut the waffles into sections, if preferred, and arrange on 4 serving plates. Dust with confectioners sugar, garnish with grated orange zest and serve with warm maple syrup.
