Ingredients

The ingredients are:
  • 2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/2 - 2 tablespoons grated orange zest
  • 2 egg yolks, at room temperature (save the whites, as it's used later)
  • 3 cups orange juice
  • 1 tablespoon vanilla extract
  • 1/2 cup butter, melted (cooled, 1 stick)
  • 1/2 cup pecans, finely chopped
  • 2 egg whites (at room temperature)
  • Confectioners sugar, for dusting
  • Grated orange zest for garnish (additional, optional)
  • Pure maple syrup

How to Make

  • Step 1: Mix the flour, sugar, baking powder, salt and the grated orange zest in a bowl.

  • Step 2: In a separate bowl, mix the egg yolks, vanilla extract, orange juice, and melted butter. Add to the dry ingredients and stir until just combined, making sure not to overmix. Fold in the pecans.

  • Step 3: In a small bowl, beat the egg whites until stiff. Fold into batter until just combined; DO NOT overmix.

  • Step 4: Ladle enough of the batter onto a heated waffle iron, spreading with the back of the ladle almost to the edges. Close the waffle iron and cook until golden brown and crisp. Repeat with the remaining batter.

  • Step 5: Cut the waffles into sections, if preferred, and arrange on 4 serving plates. Dust with confectioners sugar, garnish with grated orange zest and serve with warm maple syrup.
