Step by Step Method
Step 1
Glaze ... Add the butter, balsamic vinegar, and orange juice to a small cup or bowl; and mix to combine. Then, just set to the side. I melted the butter in the microwave - just a few seconds on medium heat.
Step 2
Sauce ... Since the salmon doesn't take long, prepare your sauce. Dice up your onions and garlic, and add those to a small bowl along with the capers.
Step 3
Salmon ... Make sure to take the fish out to take 'the chill' off. You never want to cook with cold seafood. Then, season generously with plenty of salt and pepper. I prefer to use skin on; but, not necessary. I think skin on, really gives you a very moist piece of fish.
Step 4
Saute ... I like to start with the flesh side down. Lightly oil your pan (I prefer cast iron, or a non-stick pan), and bring to medium high heat. Then, brush the flesh side of the salmon with your balsamic butter, and saute for 3-4 minutes. Then, flip and brush the top (flesh side), once again with more of the balsamic butter. Saute the fish until tender, and brush with the butter 1 more time during cooking. You want the fish firm, but tender; I like my salmon medium, still a bit red in the middle (about 3-4 more minutes if that). But cook it to your liking. Once the salmon is done; remove to a plate, and cover with foil as you make the sauce.
Step 5
Sauce ... In the same pan on medium to medium high heat, add a little olive oil only if necessary (I usually don't find it necessary to add any extra); and, add the shallots, garlic, and capers, and saute, stirring often for 2-3 minutes until the shallots are tender. Add any of the orange balsamic butter that remains (probably just a drizzle if any).
Step 6
Serve and ENJOY! ... Plate your salmon, and spoon the caper sauce over the salmon. As mentioned, I like to serve with rice; and, a vegetable of choice.
