"I love Barley water, it is a refreshing drink and has many health benefits. Here is a simple recipe I have used many times. Note ~ The amount of sugar you choose (listed below) to use is up to you, as some people like it sweeter than others."

Step by Step Method
Step 1
Place the barley in a fine sieve and rinse the barley under cold running water to remove dirt or grit.
Step 2
Place the barley in a pot and cover with the filtered water and bring to a boil; turn heat to low & simmer on low, covered, for 40 minutes.
Step 3
Keeping the liquid strain off and discard the barley; whilst the liquid is still hot, add the lemon and orange rind and the sugar (add sugar amount to suit taste).
Step 4
Stir well, and leave to cool, then stir in the lemon and orange juice; strain keeping liquid & discarding the citrus rind, pour liquid into a jug or clean bottle and refrigerate.
Step 5
Serve chilled.
