"This is a gem of a recipe that I got from the Picky-Palate blog online and adapted it slightly. It's great for those times you want something to settle your chocolate or sweets cravings. It uses a 2 cup ramekin, but if you have 1 cup ramekins, you can just divide the dough between 2 ramekins. You can get the 2 cup ramekins at William Sonoma, possibly Walmart or Big Lots, or you can order them online. This is great served with a scoop of French Vanilla or Chocolate Chip ice cream and drizzled with hot fudge and sprinkled with nuts! Did I say YUMMY!!! The kids will love this one too as they can make up their own and don't have to bother mom! "

Step by Step Method

Step 1

Place butter and sugars into a 2 cup ramekin, beat with spoon until well combined.

Step 2

Add beaten egg and vanilla, mixing to combine.

Step 3

Add flour, baking soda and salt. Stir a couple times, then add chocolate chips and nuts, stirring to combine.

Step 4

Microwave for 60 seconds then remove. Run a plastic knife around edges. It will be slightly gooey, but no worries. The cookie will continue to set up in hot ramekin.

Step 5

Top with a large scoop of French Vanilla or Chocolate Chip ice cream, and drizzle with hot fudge and a sprinkling of chopped nuts. Serve immediately.

Great microwave cookie! My Hubby especially loved this. I used a whole egg and it turned out a bit eggy tasting, so I guess next time I'll just use the whites since that should be about 2T like it calls for. I served it with homemade french vanilla ice cream. Yum! Freddy Cat says thanks for the sweets! Made for the Billboard recipe tag game.

These individual "cookies" are one of my favorites already! My kids and husband go nuts for them too and request them all the time. We have found several recipes here using Ramekins and we love to make them because they are quick and only take minutes to make. We love it with ice cream and hot fudge. What a great mini recipe this is! Thank you!

I have made mug cakes before with various results but this is the first mug cookie I have made. We loved the gooey cookie topped with the vanilla ice cream. Made two of these this weekend while luxury camping. They were so delicious and now we are both stuffed! Made for Billboard tag.
