Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Grease a 9 x 5-inch loaf pan.
Step 3
In a small bowl combine the cinnamon filling ingredients.
Step 4
In a large bowl combine flour, baking soda, sugar, cinnamon and salt; add in oil, egg and buttermilk; beat until well combined.
Step 5
Mix in the raisins or nuts.
Step 6
Pour half of the batter into the loaf pan, then sprinkle one-third of the cinnamon/sugar mix over the batter.
Step 7
Repeat two more times (ending with the cinnamon/sugar mixture on top)
Step 8
Bake for 50-60 minutes.
Step 9
Cool in pan for about 8-10 minutes then remove to a wire rack to cool completely.
Step 10
Drizzle with vanilla glaze if desired.
