Step 1: Preheat oven to 350 degrees F.
Step 2: Grease a 9 x 5-inch loaf pan.
Step 3: In a small bowl combine the cinnamon filling ingredients.
Step 4: In a large bowl combine flour, baking soda, sugar, cinnamon and salt; add in oil, egg and buttermilk; beat until well combined.
Step 5: Mix in the raisins or nuts.
Step 6: Pour half of the batter into the loaf pan, then sprinkle one-third of the cinnamon/sugar mix over the batter.
Step 7: Repeat two more times (ending with the cinnamon/sugar mixture on top)
Step 8: Bake for 50-60 minutes.
Step 9: Cool in pan for about 8-10 minutes then remove to a wire rack to cool completely.
Step 10: Drizzle with vanilla glaze if desired.
