"I remember growing up looking forward to that first dish of rhubarb - it was Spring. But then the rhubarb continued to grow & grow and stewed was not looked forward to. Thank heavens there were so many other ways to enjoy it. Try having this stewed over ice-cream."

Step 1

Heat over medium high heat stirring until the sugar has melted.

Turn heat to medium & continue cooking uncovered., stirring every once in a while,for about 15 minutes or until the rhubarb is soft.

Wonderful recipe! I followed exactly as written, and served with vanilla ice-cream. No-one else in the family eats Rhubarb, so I got to enjoy this wonderful dish for breakfast and dessert for a few days on my own. You are so right Bergy .... It did bring back wonderful memories of growing up. Simple easy and just the perfect recipe to enjoy fresh Rhubarb.
