Mom's Custard Pie

"My dad's favorite pie. Funny story - the first time my husband, then my boyfriend, came over to meet my parents, mom decided to made this pie. She must have been a bit flustered, because she forgot the sugar! Mom served his piece first and he ate a few bites before one of us tasted it and declared it unfit. Mom decided he was a keeper, since he was so polite about eating that awful pie. Use my Pie Crust recipe, or my sister Lauren's if you're a beginner, both under my recipes."

Step by Step Method
Step 1
Preheat oven to 400 degrees. Scald milk in double-boiler or microwave. If microwave, make sure container is only half full. Make rest of recipe by hand, not in a mixer.
Step 2
In separate bowl, whisk eggs a little, then add sugar and salt and stir. Temper egg mixture with a little scalded milk. (To temper, add a small amount of hot milk to eggs, stirring constantly. Repeat until eggs have heated enough to add milk.)
Step 3
Add scalded milk, stirring constantly so eggs don't cook. Stir in vanilla and nutmeg and pour into chilled pie shell.
Step 4
Bake 25-30 minutes or until all but about an inch in the center is set. Be careful not to overcook. Cool completely before cutting.
