Step by Step Method

Step 1

Saute the onion and bell pepper in 1 tablespoon butter until translucent.

Step 2

Add to egg yolks with the ham and 1/4 cup cheese. Keep pan on burner; add more butter.

Step 3

Fold in the egg whites gently. Pour into hot pan. Top with 1/4 cup cheese. Cover; turn down heat really low and cook until set. May need to flip over or cook a minute in microwave.

This made for a unique and tasty breakfast treat for us this morning! Instead of folding the omelette, I did the same thing as stated in another review and put it in the oven to finish cooking off the egg white layer. It was just too pretty to fold! It does remind me of a souffle. It was also really tasty with the ham, onion, and red bell pepper. Yummo. Thank you!

Your Mom, Florence, and Grandma McGuire, sure did know what they were doing. This omelet sure is a sure winner and the texture is so light and fluffy. It comes out like a soufflé type of omelet and very delicious! I made two large omelets (6 eggs each), one with cheese and no onions, and the other with all the veggies and no cheese. Finished it off in the oven to cook through and it came out perfectly. They were both great and highly recommended. Thank you, Dee, for sharing! Made it for Only The Lonely Tag.
