Step by Step Method

Step 1

Add the flour to the bowl of an electric mixer.

Step 2

Add the salt to one side and the yeast to the other side and mix.

Step 3

With the motor running on low, add 1 cup of the warm water and let the dough come together and get smooth and pliable for 5 minutes.

Step 4

Increase the speed to medium and add the remaining water; mix for 2 minutes.

Step 5

Add the olive oil and mix for another 2 minutes.

Step 6

The dough may appear to be wet but it’s fine. Remove the bowl and using a soft spatula fold the olives into the dough.

Step 7

Place the remaining tablespoon of oil in a large bowl and add the dough

Cover and let sit at room temperature for 2 hours until risen and starting to bubble.

Step 9

Preheat the oven to 450F degrees.

Step 10

Working on a lightly floured surface, remove the dough from the bowl.

Step 11

Cut the dough in half; and using your lightly floured hands pat the half portion of dough down to about 1/4 inch thick.

Step 12

Using a pizza cutter or pastry scraper, cut out 9 breadsticks.

Step 13

Place the breadsticks on the prepared baking sheet.

Step 14

Repeat with the remaining half of the dough.

Step 15

You should have 18 breadsticks.

Step 16

Sprinkle lightly with the coarse sea salt .

Step 17

Bake for about 15 to 16 minutes or until golden brown.

Step 18

When you tap on the bottom of the breadstick, it should sound hollow.

Step 19

Place on a baking sheet to cool.

I love caldevestrano olives, so I was excited to make this. The breadsticks themselves were quite good, although the taste of the olives did not come through as much as I would have liked. I think a stronger flavor olive will be used next time, because there will be a next time!
