Step by Step Method

Step 1

Heat oil in stock pot.

Step 2

Add onions cook until translucent.

Step 3

Add garlic and chili powder, cook until fragrant.

Step 4

Add sweet potatoes and carrots.

Step 5

Simmer for 5 minutes.

Step 6

Add rest of ingredients and simmer 30 more minutes until lentils are soft.

Wonderful soup! I did make a couple of changes to suit our tastes and what I had on hand. Used a 28 oz can of unsalted tomatoes (and less water), added some cumin and cayenne and left the salt out. And finished it with a good splash of lemon juice. DH was very happy with his dinner as was I. Served it with homemade biscuits. Thank you for sharing another keeper soup recipe Dienia!
