Step by Step Method

Step 1

Whisk eggs in a bowl. Set aside.

Step 2

In a large cast-iron skillet - or other skillet - heat oil until it shimmers, but not smoking.

Step 3

Add onion and peppers, lower heat and cook until they are softened.

Step 4

Add tomatoes and seasonings. Cook about 3 more minutes.

Step 5

Add whisked eggs and cook, stirring gently until just set.

Step 6

Serve immediately from skillet.

A quick and tasty breakfast or supper. I didn't change anything except for using 1 can of drained fire roasted tomatoes instead of fresh. I think cheese would also be a great addition. I made this for Food, Friends, and Fun.

This was quite good. I loved the nice kick from the use of red pepper flakes in this recipe, it really gave a nice warming feeling to the dish. I think next time I'll use half the amount of chopped peppers and tomatoes though, because the full 2 cups for both those ingredients was a bit too much. But everything else was just right, especially the red pepper flakes. Thanks, Linky!

I love Turkish eggs and your lovely recipe does not disappoint Linky. It was quick and easy to make and it tasted great. I used grape tomatoes (what I had on hand) they worked beautifully in your dish. Thank you for sharing a recipe that I will enjoy again. Made FYC tag game.
