Step 1: Whisk eggs in a bowl. Set aside.
Step 2: In a large cast-iron skillet - or other skillet - heat oil until it shimmers, but not smoking.
Step 3: Add onion and peppers, lower heat and cook until they are softened.
Step 4: Add tomatoes and seasonings. Cook about 3 more minutes.
Step 5: Add whisked eggs and cook, stirring gently until just set.
Step 6: Serve immediately from skillet.
