Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 cup onion, chopped
  • 2 cups peppers, chopped (mild green or sweet red or both)
  • 2 cups tomatoes, chopped
  • 1 teaspoon oregano, dried
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 6 eggs

How to Make

  • Step 1: Whisk eggs in a bowl. Set aside.

  • Step 2: In a large cast-iron skillet - or other skillet - heat oil until it shimmers, but not smoking.

  • Step 3: Add onion and peppers, lower heat and cook until they are softened.

  • Step 4: Add tomatoes and seasonings. Cook about 3 more minutes.

  • Step 5: Add whisked eggs and cook, stirring gently until just set.

  • Step 6: Serve immediately from skillet.
