"This is one of my very favorite recipes, simple yet delicious. I wish I had found it 30 years ago! I like to toss the pasta with fresh tomatoes. For a main course, toss with shrimp sauteed in a butter and garlic. The recipes calls for using a pot and a skillet, but I usually just add the remaining ingredients into the pasta pot after draining the pasta. From Marie at food.com"

Step by Step Method
Step 1
Cook pasta in large pot of salted water until al dente.
Step 2
While pasta is cooking, whisk together eggs, cheese, parsley and salt and pepper.
Step 3
When pasta is almost done, melt butter in large nonstick skilled over medium heat.
Step 4
Drain the pasta and add it to the skillet, quickly toss with butter.
Step 5
Add the egg mixture to the skillet and mix together for less than a minute, until the eggs and noodles are creamy and thick. (Use a flat wooden spoon or spatula.)
Step 6
Remove from heat immediately. Do not cook the eggs too long or they will scramble and ruin the dish.
Step 7
Serve immediately.
