Ingredients

The ingredients are:
  • 1 tablespoon salt (for boiling water)
  • 1 pound dry angel hair pasta
  • 4 large eggs
  • 1/3 cup parmesan cheese, shredded
  • 2 tablespoons chopped parsley
  • Salt to taste
  • 1/4 teaspoon freshly ground black pepper
  • 4 tablespoons butter

How to Make

  • Step 1: Cook pasta in large pot of salted water until al dente.

  • Step 2: While pasta is cooking, whisk together eggs, cheese, parsley and salt and pepper.

  • Step 3: When pasta is almost done, melt butter in large nonstick skilled over medium heat.

  • Step 4: Drain the pasta and add it to the skillet, quickly toss with butter.

  • Step 5: Add the egg mixture to the skillet and mix together for less than a minute, until the eggs and noodles are creamy and thick. (Use a flat wooden spoon or spatula.)

  • Step 6: Remove from heat immediately. Do not cook the eggs too long or they will scramble and ruin the dish.

  • Step 7: Serve immediately.
