Step by Step Method
Step 1
Preheat the oven to 350° F. Grease an 8" x 8" baking dish and set aside.
Step 2
Cook the pasta as directed on the package until al dente. Drain and set aside.
Step 3
Heat the milk in a large saucepan over medium heat. Add the onion and bring just to a boil. Remove from the heat and stir in the cottage cheese, cheddar cheese, goat cheese, mayo substitute, egg substitute, paprika, and black pepper. Whisk quickly to combine.
Step 4
Stir the pasta into the cheese mixture and mix well. Pour the pasta into the prepared baking dish. Sprinkle the top with the breadcrumbs and parmesan.
Step 5
Place in the oven and bake at 350° F for 25 minutes or until the breadcrumbs are browned and the pasta mixture is heated through.
