Ingredients

The ingredients are:
  • 5 1/3 ounces dry elbow macaroni pasta (dry 1 cup)
  • 1/2 cup skim milk
  • 2 tablespoons grated onion
  • 2/3 cup fat-free cottage cheese (or low-fat cottage cheese)
  • 1/3 cup low-fat cheddar cheese (sharp)
  • 1/3 cup goat cheese
  • 1 tablespoon low-fat mayonnaise (heaping tablespoon light mayo substitute)
  • 1/4 cup liquid egg substitute
  • 1/8 teaspoon paprika
  • Freshly ground black pepper
  • 1/3 cup breadcrumbs (seasoned)
  • 2 tablespoons freshly grated Parmesan cheese

How to Make

  • Step 1: Preheat the oven to 350° F. Grease an 8" x 8" baking dish and set aside.

  • Step 2: Cook the pasta as directed on the package until al dente. Drain and set aside.

  • Step 3: Heat the milk in a large saucepan over medium heat. Add the onion and bring just to a boil. Remove from the heat and stir in the cottage cheese, cheddar cheese, goat cheese, mayo substitute, egg substitute, paprika, and black pepper. Whisk quickly to combine.

  • Step 4: Stir the pasta into the cheese mixture and mix well. Pour the pasta into the prepared baking dish. Sprinkle the top with the breadcrumbs and parmesan.

  • Step 5: Place in the oven and bake at 350° F for 25 minutes or until the breadcrumbs are browned and the pasta mixture is heated through.
